Wow, I can only guess how they're still showing ads that are relevant to your profile, but you're right, on my account they're still showing ads related to the profile information I "deleted".
I may experiment with this, but the only thing I can think of at the moment is deleting any cookies related to ad companies and Facebook, and then see if they go away. If they don't, then a) our profile information may still be there, but not be visible, or b) Facebook has put this information somewhere else, so they can always show ads related to your profile. I don't know how their advertising system works, but it's like the old profile information has been copied into their advertising database.
