It might help if you provide some information about what version of the iPhone software you have, and what steps you're taking. I just deleted an old app I don't use any more following the steps I wrote here, and I was able to delete it just fine.
The caveat I mentioned in another post is that I haven't updated my iPhone OS in a little while now, so I'm currently using Version 3.0 (7A341). (You can see this by going to Settings > General > About, and then "Version" will be one of the fields on that screen.)
